NISSOS beers are also superior in biological value as their composition contains more bioactive elements than other beers, for the benefit of human health and well-being. They are the only beers with an AFQ certification for their very high -almost as high as red wine- bioactivity.

IN ADDITION TO ITS SUPERIOR FLAVOUR, OUR PRODUCTION PROCESS AND RAW MATERIALS PROVIDE NISSOS BEERS WITH A WEALTH OF ANTIOXIDANT COMPOUNDS THAT ARE BENEFICIAL TO OUR HEALTH

Antioxidants are important compounds that help us stay healthy thanks to their action against oxidative stress. Clinical and pre-clinical data on the protective effects of moderate beer consumption against cardiovascular disease and other diseases have been recorded for a long time and the non-alcoholic compounds in beer seem to exert most of the relevant beneficial effects. The many antioxidants contained in NISSOS beers reduce free radicals which are produced as by-products in human metabolism. This action means that moderate consumption of beer can have a protective effect against a variety of pathological conditions.

Furthermore, the high endogenous antioxidant activity of our unfiltered and preservative-free beers, protects their taste during the period between production and consumption. The antioxidant properties of our beers not only impact their shelf life but also the stability of their taste as they protect the raw materials from oxidation which could potentially affect the quality of our beer.

The antioxidants contained in NISSOS beers constitute the most important endogenous “guardians” of our taste and the “guarantors” of their beneficial effect on human health.

PRODUCTION STEPS

THE WAY OF NISSOS

It may take only 4 ingredients to brew beer, but what makes NISSOS so special and unique is the quality of our raw materials, our recipes, the combination of our ingredients and finally the process, the art of brewing! We select the finest of malts from a mainly Greek (80%) but also European origin. High quality hops from all over the world, and yeast which we tenderly care for, so that we can carefully brew in a completely natural way and without any haste, the NISSOS you love.

WATER

Water is part of our recipe. A beer with a stable taste requires a constant and unchanging water composition. With the help of high-tech filters we add and remove natural minerals from the water, improving each of our recipes.

MALT

These are cereal grains that have undergone the malting process to release natural enzymes. We brewers use these enzymes to convert starch into sugars. Later on in the fermentation stage and thanks to the yeast, the sugars will be converted into alcohol and CO2. The different malts are our tools that give flavour, colour and texture to our beers.

HOPS

Hops are the flowers of the plant of the same name. They are added, in their natural form, during boiling and not only. There are many species and they can be combined to give our beers bitterness, wonderful light or more spicy flavours. In addition, these "magic" hops help us protect our beers by acting as natural preservatives.

YEAST

Yeast is a tiny, living, hungry microorganism that loves sugars! It consumes them and metabolizes them into alcohol and carbon dioxide, which is a wonderful carbonate. The yeast turns malt and hop mash into our beloved NISSOS Beer.

For our beloved Nissos Beer to reach our glass, it is a long road made up 9 stages

1

Milling

Cereal malt is transported to our mill for milling, i.e. breaking the grain into smaller pieces.

Mashing

The ground malt blend is transferred to the brewhouse to start the "boiling". In the mash tun, it is mixed with hot water and in a completely natural way the starch is converted into fermentable sugars.

Wort filtration (Lautering)

The extract is separated in a completely natural way and without any mechanical assistance from the solid residues of the malt, in order to obtain the wort.
The malt residue, rich in nutritional value, is offered to a livestock unit on the island, as it is excellent animal feed.

Boiling

The wort is transferred to the kettle. In there, hops are added at different stages of boiling to give NISSOS beers their aromas and special taste.

Fermentation

When the boiling is over, the "unfermented beer" is allowed to settle down before being transferred to the refrigerated fermentation tanks. In these tanks, it will meet its true creator, the yeast, the hungry micro-organism that will convert sugars into alcohol and carbon dioxide in a completely natural way.

Maturation

After fermentation, NISSOS is left to rest and mature in our special cylinder tanks. Fermentation and maturation take more than 30 days.

Filtration

After maturation, NISSOS is filtered organically to make it clear and stable.

QUALITY CONTROL

Before and after bottling or kegging, all our batches are thoroughly tested, including with a special molecular tracing system (PCR) in our brewery laboratory.

BOTTLING OR KEGGING

The last, crucial step! Apart from the microorganisms of the environment that may cause deterioration in quality and taste, the delicate fresh NISSOS has another invisible enemy: oxygen! Among the many protection measures we apply, one is hidden inside our caps: Their coating over the dolphin and anchor is a minor miracle of technology: it literally captures and imprisons the infinitesimal oxygen that has escaped into our NISSOS bottles during isobaric filling. So, we deliver it to you in perfection!
